Instructions For Lobster Tails

Prepare the Lobster Tails: First, cut down the lobster tail in half, leaving it connected at the end of the tail so it can be fanned out.

Make the Compound Butter: In a mixing bowl, add your butter, minced garlic, 1 tablespoon of parsley, and Cajun seasoning. Then, mix thoroughly until you form a smooth compound butter.

Separate the Lobster Meat: With your fingers, gently separate the lobster meat from the shell, keeping the meat closest to the tail connected.

Add the Cajun Butter: Next, add your Cajun butter inside the shell of the lobster and then lay the meat on top of it.

Season the Lobster Tails: Now, season your lobster tails generously with additional Cajun seasoning.

Set Up the Grill: Meanwhile, set up your grill for 2-zone cooking, ensuring one side is hot and the other is cooler.

Grill the Lobster Tails: Once the grill is ready, place your lobster tails shell-side down on the hot side of the grill.

Flip and Sear: After 2-3 minutes, flip the tails so they are meat side down. Sear them for a few minutes.

Move to Cool Side: Then, move the lobster tails to the cool side of the grill.

Check the Temperature: Continue grilling until your lobster reaches an internal temperature of 143 degrees Fahrenheit; this indicates they are done.

Finish with Lemon Juice: Finally, squeeze fresh lemon juice over the top of the lobster tails.

Garnish: To finish, garnish with a sprinkle of fresh parsley.
