- 20 Jumbo Shrimp
- 20 Slices of Prosciutto
- Cooking oil (I used Truffle oil)
- Lemon pepper or seafood seasoning
- BBQ seasoning (Ill list the ingredients for the seasoning i used down below)
- Chopped chives for garnish
- Japanese BBQ sauce
Instructions
- Prepare the Shrimp: Peel and devein all the shrimp, ensuring they are clean and ready for seasoning.
- Coat with Oil and Seasoning: Lightly coat the shrimp with cooking oil, then season generously with lemon pepper seasoning for a burst of citrusy flavor.
- Wrap with Prosciutto: Cut the prosciutto slices in half, then wrap each shrimp with a slice of prosciutto, leaving the seams on the bottom to secure the wrapping.
- Prep for Smoking: Place the prosciutto-wrapped shrimp on a cooking rack, ensuring they are evenly spaced for thorough smoking.
- Season with BBQ Seasoning: Sprinkle the shrimp with BBQ seasoning, adding a savory kick to complement the smoky flavor.
- Smoking Process: Preheat your smoker to 275-300 degrees Fahrenheit and place the shrimp inside. After 20 minutes, the prosciutto should tighten up.
- Glaze with Japanese BBQ Sauce: Once the prosciutto tightens, coat the shrimp with Japanese BBQ sauce for a sweet and savory finish.
- Continue Smoking: Let the shrimp smoke for another 10 minutes, allowing the flavors to meld and intensify.
