- Season your bison steak on both sides with steak seasoning
- Heat up a skillet on medium heat
- Sear off your bison steak on both sides
- Once you get a nice crust baste with melted butter till the internal temperature reaches 130 degrees
- Once your steak hit 130 degrees(54°C) remove and let it rest
- While your bison steak is resting in the same skillet add 2 tablespoons of butter
- Once the butter is melted add your diced shallots
- Let the shallots cook down for 1-2 minutes then add minced garlic
- Once the everything become fragrant add crumbled gorgonzola, parmesan cheese & mix
- Once everything is mixed together stir in heavy cream
- Let the cheese mixture simmer for a few minutes so it thickens up
- Slice up the bison steak into desired thickness
- Drizzle the gorgonzola cream sauce over the top of the bison steak
