Cooking Instructions For Bison Steak

Season the Steak: Begin by generously seasoning both sides of your bison steak with your favorite steak seasoning. This step ensures bold, flavorful bites from start to finish.

Seasoned Bison steak

Heat the Skillet: Next, heat a skillet over medium heat. Make sure the pan is hot before proceeding to get a perfect sear.

Sear the Bison Steak: Place your seasoned bison steak in the skillet and sear it on both sides. Let it cook until you achieve a gorgeous, caramelized crust.

Seared

Baste with Butter: Once the crust forms, baste the steak with melted butter. Continue basting and cooking until the internal temperature reaches 130°F (54°C) for medium-rare doneness.

Preparing Gorgonzola Cream Sauce

Let It Rest: Remove the bison steak from the skillet and let it rest on a cutting board. Resting locks in the juices, making the steak even more tender.

Prepare the Sauce Base: In the same skillet, add 2 tablespoons of butter and let it melt.

Cook the Aromatics: Once the butter is melted, toss in diced shallots. Allow them to cook for 1-2 minutes, stirring occasionally, then add minced garlic. Cook until the mixture becomes fragrant.

Add the Cheeses: Stir in crumbled gorgonzola and grated parmesan cheese. Mix well until the cheese begins to melt into a smooth base.

Gorgonzola mixture

Incorporate Heavy Cream: Slowly stir in the heavy cream to create a luscious, creamy sauce. Let it simmer for a few minutes to thicken and meld the flavors together.

Gorgonzola Cream Sauce

Slice the Steak: Slice the rested bison steak into your desired thickness.

Drizzle the Sauce: Generously drizzle the gorgonzola cream sauce over the sliced steak for an indulgent finish.

Garnish and Serve: Sprinkle chopped chives on top for a pop of color and freshness. Serve immediately and enjoy this flavorful, restaurant-quality dish!
