Ingredients:

  • 1 head of garlic minced 
  • 1 cup of fresh chopped cilantro 
  • ½ cup orange juice 
  • ¾ cup beer (I recommend using corona or modelo) 
  • Juice of 2 limes 
  • 1 lime sliced into wedges 
  • ¼ cup olive oil 
  • 2 tsp ground cumin 
  • 2 tsp of red chili powder 
  • ½ white onion chopped
  • 3 whole green onions 
  • Corn Tortillas 
  • 2 lbs of flap steak. You can use skirt or flank steak for this recipe as well 
  • 2 tablespoons of salt & pepper

Carne Asada Marinade Process

Marinate the Beef: Grab a deep dish tray for marinating your beef. Using a fork, poke multiple holes into the steak to allow the marinade to seep in better.

Prepare the Marinade: In the tray, combine a can of beer, orange juice, lime juice, cumin, chili powder, minced garlic, and freshly chopped cilantro (reserve about a tablespoon for garnishing). Stir to mix everything well.

Submerge the Steak: Place the steak into the marinade, pressing it down so each piece is submerged for even flavor. Lay green onions on top for added aroma and flavor.

Marinate Time: Cover and refrigerate the tray for at least 4 hours—though for the best results, let it marinate overnight. This extended time will infuse the steak with rich, bold flavors.

Cooking Process

Prep for Grilling: Once marinated, remove the steak from the tray and pat it dry with paper towels. Season both sides generously with salt and pepper to enhance the taste.

Set Up the Grill: Preheat your grill to high heat, around 425°F (220°C), for a proper sear. This high temperature will give the steak those perfect grill marks.

Sear the Steak: Place the steak on the hot grill, searing each side until they reach your desired level of doneness. For medium-rare, grill the steak until it reaches an internal temperature of 130°F(54°C)

Rest the Steak: After grilling, let the steak rest for about 10 minutes. This allows the juices to settle, making each bite more flavorful.

Slice and Serve: Slice the steak against the grain into small, bite-sized pieces for tender, easy-to-eat tacos. Toast the tortillas briefly on the grill for extra warmth and flavor.

Assemble the Tacos: Add the steak pieces to each tortilla, garnishing with white onion, reserved cilantro, and a squeeze of fresh lime juice. Enjoy your BBQ Carne Asada Tacos hot off the grill!

You can also add chimichurri on top of these tacos for an extra layer of flavor

Ingredients

  • 1 head of garlic minced
  • 1 cup of fresh chopped cilantro
  • ½ cup orange juice
  • ¾ cup beer (I recommend using corona or modelo)
  • Juice of 2 limes
  • 1 lime sliced into wedges
  • ¼ cup olive oil
  • 2 tsp ground cumin
  • 2 tsp of red chili powder

Instructions

  • Grab a deep dish tray to marinate your beef in 
  • With a fork poke a decent amount of holes into your steak 
  • In the tray add beer, orange juice, lime juice, cumin, chili powder, minced garlic, fresh chopped cilantro (save a tablespoon for the garnish) and mix 
  • Add your steak and press down on them so all the pieces get submerged 
  • Add your green onions on top and place in the refrigerator for a minimum of 4 hours i recommend marinating it overnight 
  • After the steaks are done marinating remove them from the tray and pat dry 
  • Season the steak on both sides with salt & pepper 
  • Set your grill for high heat grilling. I set my grill to 425 degrees(220°C)
  • Once your grill is up to temp sear off your steaks on both sides 
  • Once your steak reached an internal temperature of 130 degrees(54°C) they are done 
  • Let the steaks rest for 10 minutes before slicing 
  • Slice your steak against the grain and into small pieces ensuring a nice bite 
  • Toast your tortillas on the hot grill 
  • Add steak to each tortilla and garnish with white onion and cilantro 
  • Squeeze some fresh lime juice over the top and enjoy!
