Why Chimichurri Wings Work
Smoking the wings infuses them with a deep, smoky flavor that penetrates the meat. The slow cooking process allows the chicken to absorb the smoky essence, making every bite more flavorful.
Chimichurri is a vibrant, herbaceous sauce with garlic, parsley, oregano, vinegar, and oil. When applied to smoked wings, the fresh, tangy flavors of the chimichurri contrast beautifully with the deep, rich smokiness, creating a balanced and complex taste.
The two-step process also allows for more experimentation with flavors. You can try different wood chips for smoking or a different seasoning
The herbs and garlic bits in the chimichurri add a delightful texture contrast to the crispy skin and tender meat of the wings.

Cooking Process for Chimichurri Wings
Begin by patting dry the chicken wings using paper towels.
Season the wings generously on both sides with the aromatic Lemon Pepper seasoning.

Place the seasoned wings on your smoker preheated to 325 degrees Fahrenheit(163°C), allowing them to cook until they reach an internal temperature of 170 degrees Fahrenheit(77°C).
While the wings smoke, prepare the vibrant chimichurri sauce. In a mixing bowl, combine all the chimichurri ingredients, ensuring thorough mixing, and allow the flavors to meld for 30-40 minutes.
Once the wings have reached the desired internal temperature, carefully remove them from the smoker.

Heat your frying oil to 350 degrees Fahrenheit(176°C).
Deep-fry the seasoned wings for 3-4 minutes until they achieve a golden, crispy perfection.

Add all of your fried wings to a mixing bowl & drizzle your chimichurri sauce over the top

Toss the wings in chimichurri sauce thoroughly ensuring all sides get covered
Plate up and share with your friends!

Notes
Smoking then frying chicken wings combines two cooking techniques to create a flavorful and crispy dish. Here's why this method is beneficial:
Flavor Enhancement:
- Smoking: Imparts a rich, smoky flavor to the chicken wings that can't be achieved through frying alone. The smoke infuses the meat with a deep, complex taste.
- Frying: Adds another layer of flavor by creating a crispy exterior and enhancing the overall taste.
