  • 2 bone in pork chops 
  • Fresh chopped cilantro for garnish 
  • All purpose seasoning (I used a roasted garlic & onion seasoning)

Ingredients for Mango Salsa 

  • 1-2 red Bell Peppers (chopped)
  • 3 ripe mangos (Diced) 
  • ½-1 red onion (chopped)
  • ¼ cup of fresh chopped cilantro 
  • Juice of 1 lime 
  • ½ tsp of italian herb seasoning 
  • ½ tablespoon of extra virgin olive oil 

Ingredients for Mojo Marinade

  • 1 ½ cup of extra virgin olive oil 
  • Juice of 1 large orange 
  • 6 garlic cloves minced 
  • 1/2 tbsp Italian herb seasoning 
  • 1 teaspoon of salt 
  • 1 teaspoon of black pepper 
  • ¼ cup of fresh oregano 
  • 2 rosemary sprigs

  • Make sure you lift the pork chops up with fork so the oil gets underneath
  • Let the marinate in the refrigerator for 3 hours flipping them halfway through 
  • Remove the pork chops from the marinade and pat dry 
  • Season the pork chops on both sides with an all purpose seasoning 
  • Set up your grill for 2 zone cooking 
  • Grill your pork chops on both sides till you get a nice crust 
  • Move them over to the cool side of the grill till the internal temperature reaches 140 degrees 
  • Let them rest for 10 minutes 
  • Add mango salsa over the top of the pork chops 
  • Garnish with fresh chopped cilantro
