Why Beer Brining Wild Boar Chops Works

Tenderizes the Meat: The natural acidity and carbonation in beer help break down tough muscle fibers, making the wild boar chops more tender.

Adds Flavor Depth: Beer infuses the meat with rich, earthy flavors from the hops, barley, and malt, complementing the gamey taste of wild boar.

Moisture Retention: The brine helps the wild boar retain moisture during cooking, preventing the lean meat from drying out on the grill.

  • 4 Bone-in wild boar chops 
  • 24 ounces of beer(I used modelo) 
  • 7-8 rough chopped garlic cloves 
  • 1 yellow onion sliced 
  • Juice of 2 oranges 
  • 2 cups of store bought orange juice 
  • 1 cup of traditional pork BBQ seasoning 
  • 2-3 tablespoons of Italian herb seasoning 
  • 6-8 rosemary sprigs 
  • 1 pound of green beans

Beer Brine Process

Prepare the Chops: Begin by trimming off any excess fat from the wild boar chops, but be sure to leave a little fat on for added flavor during grilling.

Create the Brine: In a large mixing bowl, combine 24 ounces of beer, 2 cups of orange juice, ¾ cup of BBQ seasoning, Italian herb seasoning, rough-chopped garlic, and the juice of 2 oranges. Whisk everything together thoroughly to ensure the flavors blend well with the beer.

Prepare the Dish: For this step, use a deep dish tray. Pour half of the beer brine into the tray, then add half of your sliced onions to create a flavorful bed for the meat.

Add the Chops: Lay the wild boar chops on top of the onions, then pour the remaining brine over them until fully submerged. Top with the rest of the sliced onions, fresh orange slices, and sprigs of rosemary.

Refrigerate and Marinate: Cover the dish with aluminum foil and place it in the refrigerator for 3 hours to allow the wild boar chops to absorb all the flavors.

Grilling Process

Grill Prep: After 3 hours, remove the wild boar chops from the brine and pat them dry. Lightly season the chops with BBQ seasoning. Set your grill up for 2-zone grilling and preheat to 450°F(230°C).

Searing the Chops: Sear the wild boar chops on all sides, flipping every 2-3 minutes to develop a nice crust. Once the chops have a crispy outer layer, move them to the cooler side of the grill.

Grilled Boar

Cook to Perfection: Continue cooking the chops on the cooler side until they reach an internal temperature of 143°F(62°C). This will ensure the meat is cooked through but still tender and juicy.

Rest and Serve: Once they reach the desired temperature, remove the chops from the grill and let them rest for 10 minutes. This allows the juices to redistribute.

  • 4 Bone-in wild boar chops
  • 24 ounces of beer(I used modelo)
  • 7-8 rough chopped garlic cloves
  • 1 yellow onion sliced
  • Juice of 2 oranges
  • 2 cups of store bought orange juice
  • 1 cup of traditional pork BBQ seasoning
  • 2-3 tablespoons of Italian herb seasoning
  • 6-8 rosemary sprigs
  • 1 pound of green beans

Instructions

  • Trim off any unwanted fat from the wild boar chops(Leave some fat on) 
  • In a large mixing bowl add beer, orange juice, ¾ cup of bbq seasoning, Italian herb seasoning, rough chopped garlic and juice of 2 oranges 
  • Whisk together thoroughly so all the ingredients infuse with the beer 
  • This next step I used a deep dish tray. Dump out half the beer brine into the deep dish tray 
  • Then add half of your sliced onions into the beer brine 
  • Lay the wild boar chops on top of the onion bed 
  • Pour the rest of your brine over the wild boar chops till they are submerged 
  • Add the rest of the slice onions on top 
  • Add some fresh orange slices & rosemary sprigs throughout the whole beer brine 
  • Cover with aluminum foil and place in the refrigerator for 3 hours 
  • After 3 hours remove the wild boar chops from the beer brine and pat dry 
  • Season the wild boar chops lightly with BBQ Seasoning 
  • Set your grill up for 2 zone grilling 
  • Heat up your grill to 450 degrees(230°C)
  • Sear off all your wild boar chops on all sides so you develop a nice crust. I flip these chops every 2-3 minutes to ensure even cooking 
  • Once you have a nice crust on your wild boar chops move them over to the cool side of the grill till they reach an internal temp of 143 degrees(62°C)
  • Once you hit an internal temp of 143 degrees remove them from the grill and let them rest for 10 minutes 
  • Plate over some green beans and enjoy!
