- ¼ cup ranch or blue cheese dressing
- 1 tablespoon grated parmesan cheese

Prepare the Meatball Mixture: In a large mixing bowl, combine the ground chicken, grated onion, egg, breadcrumbs, parsley, minced garlic, ranch seasoning, parmesan cheese, and a pinch of salt and pepper. Using your hands coated in olive oil, mix everything thoroughly until well combined.
Shape the Meatballs: Once mixed, coat your hands with olive oil again and form the meat mixture into meatballs. For consistency, use about 1 ½ tablespoons of meat per ball.
Chill for Better Shape: Lay a sheet of wax paper on a baking sheet and place the meatballs on top. Transfer the sheet pan to the refrigerator for 30 minutes. This step helps the meatballs hold their shape while cooking.
Sear the Meatballs: After chilling, heat a skillet over medium heat and coat it with olive oil. Sear the meatballs on all sides until they are golden brown and reach an internal temperature of 165°F (74°C).
Finish and Garnish: Transfer the cooked meatballs to a serving dish. Drizzle them with ranch dressing and Buffalo sauce for that signature flavor. Finally, garnish with chopped chives for a pop of color and freshness.

- 1 pound ground chicken

- In a large mixing bowl add ground chicken, grated onion, egg, bread crumb, parsley, minced garlic, ranch seasoning, parmesan cheese, salt & pepper
- Coat your hands in olive oil and mix thoroughly till all ingredients are well combined
- After everything is mixed, coat your hands in olive oil one more time and form your meat balls. Each one of the meatballs I made were 1 ½ tablespoon of meat each ball.
- Lay wax paper down on a sheet pan
- Place your meatballs on the wax paper
- Place in the refrigerator for 30 minutes. This ensures the meatballs will keep its shape
- After 30 minutes coat a skillet with olive oil and heat up on medium heat
- Sear off your meatballs on each side till they reach an internal temperature of 165 degrees
- Place your chicken meatballs on a serving dish
- Drizzle ranch dressing and buffalo sauce over the top of the meatballs
- Garnish with chopped chives and enjoy!
