Why Lamb Meatballs Work

Bold and Unique Flavor: Lamb’s rich and slightly earthy taste pairs perfectly with aromatic herbs and spices, creating meatballs that stand out from traditional beef or pork varieties.

Versatile Dish: Lamb meatballs can be served in countless ways—over rice, tucked into a pita, or simmered in a sauce—making them suitable for appetizers, main courses, or even meal prep.

Juicy Texture: The natural fat content in lamb keeps the meatballs moist and tender, ensuring every bite is full of flavor and never dry.

Easy to Make: With minimal prep and straightforward ingredients, lamb meatballs are a quick yet impressive addition to any meal, perfect for weeknights or entertaining.

  • 4 garlic cloves minced
  • ½ tablespoon lemon zest
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Preparation

Prepare the Meatball Mixture: In a large mixing bowl, combine ground lamb, grated onion, egg, seasoned breadcrumbs, freshly chopped parsley, minced garlic, lemon zest, salt, and pepper. Using clean hands or a spatula, mix thoroughly until all the ingredients are evenly blended.

Mixed meat

Shape the Meatballs: Scoop out about 1 ½ tablespoons of the mixture for each meatball and roll into uniform balls. This ensures even cooking.

Chill the Meatballs (Optional): Line a baking sheet with wax paper and place the meatballs on top. If you have time, refrigerate them for 15-30 minutes. This step helps the meatballs hold their shape during cooking but can be skipped if you’re short on time.

Formed balls

Make the Tomato and Cucumber Salad: While the meatballs are chilling, prepare the fresh salad. Start by slicing cherry tomatoes in half and peeling the cucumber before slicing it into quarters. Add the tomatoes and cucumbers to a small mixing bowl, then drizzle with white wine vinegar, 2 teaspoons of olive oil & a pinch of chopped parsley. Mix thoroughly, season with salt and pepper to taste, and set the salad aside for later.

Cooking Process

Cook the Meatballs: Heat a skillet over medium-low heat and add a splash of olive oil. Once the oil is hot, sear the meatballs on all sides until they are golden brown and cooked through, reaching an internal temperature of 160°F (71°C). This should take about 6-8 minutes.

Seared Meatballs

Assemble and Serve: On a large serving dish, spread a generous layer of tzatziki sauce to create a flavorful base. Arrange the cooked lamb meatballs on top of the tzatziki. Spoon the prepared tomato and cucumber salad between the meatballs for a burst of freshness.

Garnish and Enjoy: Finish by garnishing the dish with fresh dill. Serve immediately and savor the delicious blend of flavors!

This step-by-step guide ensures your lamb meatballs turn out juicy, flavorful, and Instagram-worthy every time.
