  • 10 pound smoked spiral ham 
  • ½ cup honey
  • ½ cup ketchup
  • 1 tbsp teriyaki sauce (Hoisin sauce can be used for this as well)
  • 2 tbsp worcestershire sauce
  • 1 tbsp soy sauce 
  • 2 tsp of bourbon 
  • 1 tsp of salt 
  • 1-2 tablespoons dijon mustard
  • 3 tablespoons of BBQ seasoning

Bourbon Glaze

Prepare the Glaze: To start, heat a small saucepan on medium heat (about 180°C). Then, add your ketchup, honey, and teriyaki sauce to the pan. After about a minute, stir thoroughly. I always recommend getting these three ingredients combined first to allow the flavors to meld.

Add More Flavor: Next, add the Worcestershire sauce, soy sauce, and bourbon to the saucepan. Stir again to ensure everything is mixed well.

Cook Down The Alcohol: Let the bourbon cook down and allow the glaze to thicken. This will give your glaze a delicious, bold flavor. Finally, add salt, then remove the glaze from the heat and set it aside.

Double Smoked Ham Cooking Process

Prep the Ham: Now, place your ham on an elevated rack inside a cooking tray. This little trick makes cleanup so much easier later!

Mustard Binder: Coat the entire ham with Dijon mustard. The mustard acts as a binder, helping the seasoning stick to the ham(You can use yellow mustard or cooking oil as well).

Season the Ham: Then, season all sides of the ham generously with your favorite BBQ seasoning.

Smoke the Ham: Set your smoker to 225°F (107°C) and place the ham inside. Let it smoke for 1 ½ – 2 hours, which will help develop a deep, smoky flavor.

Glaze the Ham: After the initial smoke, pour your prepared bourbon glaze over the top of the ham. Use a basting brush to ensure the glaze covers all sides of the ham evenly.

Final Smoke: Return the ham to the smoker and let it cook for another hour. This will give the glaze time to tack up and form a beautiful, shiny crust.

Ingredients

  • Add worcestershire sauce, soy sauce and bourbon to the sauce pan and mix 
  • Let the bourbon cook down and allow the glaze to thicken up 
  • Finally add salt to your glaze and remove from the heat 
  • Place your ham on an elevated rack inside of a cooking tray this will make clean up so much easier 
  • Coat the sides of the entire ham with dijon mustard. This will act as a binder and help the seasoning adhere to the ham
  • Season all sides of the ham with BBQ seasoning 
  • Set your smoked to 225 degrees(107°C)
  • Place your ham in your smoker for 1 ½ hours 
  • Pour your glaze over the top of the ham
  • With a basting brush brush the glaze to ensure all the sides get covered 
  • Let the ham cook for another 30 minutes allowing the glaze to tact up 
  • Remove the ham from the smoker 
  • Carve up and enjoy this affordable holiday meal!
