  • 1 pound cheese & parsley sausage(Italian sausage will work for this as well) 
  • 3 bell peppers 
  • 1 medium yellow onion 
  • 1 tablespoon fresh chopped parsley 
  • 1 tablespoon olive oil 
  • 1 ½ tablespoons red wine vinegar 
  • Freshly grated parmesan cheese 
  • Salt & pepper to taste

Prep the Bell Peppers: First, remove the seeds and stems from the bell peppers. Then, slice them into even, slightly thicker strips—this helps them hold up to the high heat of the grill.

Slice the Onion: Next, peel your onion and slice it into similar-sized pieces as the bell peppers. Keeping the slices uniform ensures even cooking on the grill.

Season the Vegetables: After slicing, place all of the onion and pepper strips into a large mixing bowl. Drizzle with olive oil and season generously with salt and black pepper. Toss to coat everything evenly.

Preheat the Grill: Now, preheat your grill to medium heat. Make sure to leave one side of the grill off—this creates a cooler zone for indirect cooking.

Cooking Process

Grill the Peppers and Onions: Place the seasoned veggies into a grilling basket and set them over the hot side of the grill. Grill for about 5–7 minutes, stirring occasionally, until they start to soften and char slightly.

Move the Veggies to Indirect Heat: Once the peppers and onions are almost done, move them over to the cooler side of the grill to keep warm without burning.

Grill the Sausage: Now, place your sausages directly on the grill grates over medium heat. Grill for 3 minutes, then rotate them every 90 seconds. After flipping, repeat the process until all sides are nicely browned.

Check Internal Temperature: Continue grilling until the sausages reach an internal temperature of 160–163°F (71–73°C). At this point, they’re fully cooked and juicy inside.

Let the Sausage Rest: Remove the sausages from the grill and allow them to rest for 5–10 minutes. This helps the juices redistribute for the best flavor.

Add a Finishing Touch to the Veggies: Meanwhile, transfer your grilled peppers and onions back to the mixing bowl. Add a splash of red wine vinegar and toss gently to brighten up the flavor.
