Onions & Peppers

Prepare the Sheet Pan: Coat your sheet pan generously with olive oil to prevent sticking.

Season the Veggies: Place the sliced onions and peppers onto the sheet pan. Drizzle additional olive oil over the top and sprinkle with Italian seasoning. Mix everything together until the veggies are evenly coated.

Add the Sausage: Spread the onions and peppers out evenly across the pan. Then, place the sausages in the center, ensuring each one fully touches the pan. This step is crucial for proper browning.

Bake in the Oven: Preheat your oven to 425°F (220°C). Place the sheet pan in the oven and roast for 25 minutes.

Cook Your Rice: While the sausage and peppers are roasting, take this time to cook your rice. It’s the perfect base for serving this dish.

Flip the Sausage: After 10 minutes of baking, carefully flip the sausages to ensure they brown evenly on all sides.

Check for Doneness: Once the sausages reach an internal temperature of 155°F (68°C), turn your oven to low broil.

Brown the Sausages: Let the broiler brown the sausages beautifully, then remove the pan from the oven.

Roasted peppers & onions

Rest and Slice: Allow the sausages to rest for 5–10 minutes to seal in their juices. Then, slice them into your desired thickness.

Combine and Serve: Toss the sausage slices back with the roasted onions and peppers until well mixed. Plate the mixture over a bed of white rice, then finish with fresh parsley and a sprinkle of Parmesan cheese.
