- 1 pound of peeled & deveined uncooked salad shrimp(If you can find salad shrimp just buy the smallest shrimp you can find)
- Mexican crema
- 1 tablespoon cajun/creole seasoning
Pico De Gallo:
- 3 small tomatoes diced
- ½ small white onion diced
- ½ jalapeno diced(optional)
- 1 tsp of adobo seasoning
- Juice of 1 lime
- 2 teaspoons chopped cilantro
Guacamole:
- 3 avocados
- 2 small tomatoes diced
- ½ small red onion diced
- 3 teaspoons adobo seasoning
- 2 teaspoons chopped cilantro
- Juice of 1 lime

Prep
First, Prepare Your Pico de Gallo: Begin by adding all of your diced tomatoes, red onion, cilantro, jalapeño, lime juice, salt, and pepper into a mixing bowl. Stir everything together until well combined. Then, place the pico de gallo in the refrigerator to chill while you continue preparing the rest of the meal.

Next, Make the Guacamole: In another mixing bowl, mash the avocados until they are mostly smooth, leaving a few chunks for texture if desired. Add in the diced red onion, chopped cilantro, lime juice, and a pinch of salt. Mix thoroughly until well combined. Afterward, refrigerate the guacamole to keep it fresh and flavorful.

Now, Skewer the Shrimp: Thread your shrimp onto wooden or metal skewers. This step will make it much easier to grill the shrimp evenly and flip them without losing any through the grates.
Season the Shrimp: Once your shrimp are skewered, generously season both sides with Cajun seasoning to give them that irresistible spicy kick.
