  • 1 whole chicken(the one i used for this recipe was 3 ½ pounds) 
  • 3 lemons 
  • 1 tablespoon grated parmesan cheese 
  • 1 shallot diced 
  • 6 garlic cloves minced 
  • ½ stick of butter 
  • 4 rosemary sprigs 
  • 3 oregano sprigs
  • 2 thyme sprigs 
  • 1 tablespoon Italian herb seasoning 
  • 2 tablespoons all purpose seasoning

Prepare the Potatoes: Begin by placing all your potatoes in a large mixing bowl. If you notice some of the potatoes are larger, slice them in half to ensure even cooking.

Season the Potatoes: Drizzle olive oil generously over the potatoes, then mix them well so that all sides are coated evenly. Next, add minced garlic, shallots, grated Parmesan cheese, Italian herb seasoning, and 1 tablespoon of all-purpose seasoning. Mix thoroughly to ensure the potatoes are evenly coated with all the flavorful ingredients.
