Why Mexican Street Corn Works

Flavor Contrast: The sweetness of the corn contrasts beautifully with the tangy and spicy elements, like lime juice and chili powder. The smokiness from the grill adds depth to the flavor, making each bite complex and satisfying.

Creaminess and Spice: The traditional topping of mayonnaise or crema adds a creamy texture that balances the heat from the chili powder. Cotija cheese adds a salty, tangy note, while cilantro and a squeeze of lime juice offer freshness.

Grill Char: Grilling the corn brings out its natural sugars, enhancing the sweetness and adding a slightly smoky, charred flavor. This caramelization is key to the dish’s appeal, making the corn more flavorful than boiling or steaming could.

Cultural Connection: This dish resonates with the rich culinary traditions of Mexican street food, offering an authentic and flavorful experience that appeals to those seeking something both delicious and culturally significant.

Ingredients

  • 4 medium ears sweet corn, husks removed
  • 1/2 cup Mexican crema, or sour cream
  • 1/4 cup mayonnaise
  • ¼ cup Japanese mayonnaise
  • 1/2 cup chopped cilantro
  • 1-2 tablespoons of minced garlic
  • 1/4 teaspoon cajun seasoning
  • 2 teaspoons finely grated lime zest, from 1 lime
  • Juice, from 1 lime
  • 1/2 cup cotija cheese, crumbled
  • Lime wedges, to serve

Instructions

Start by prepping your corn—remove the husks and pull them down till they’re at the base of the stalk. Then, fire up your grill to a toasty 375-400 degrees.

Corn Prep

While the grill heats up, whip up the flavorful crema mixture. Combine Mexican crema (or sour cream), mayonnaise, cilantro, minced garlic, zesty cajun seasoning, lime zest, and lime juice in a bowl. Adjust the seasoning to taste, ensuring a perfect balance of flavors.

Elote

Once the grill is ready, grill the corn for approximately 3 minutes per side, or until the kernels develop a golden brown hue with a hint of char.

Charred Corn

Next comes the magic touch—using a brush or spoon, generously coat each ear of corn with the crema mixture. Sprinkle crumbled cotija cheese and cilantro over the top for an extra burst of flavor. Don’t forget to add a dash of cajun seasoning for an extra kick.

Serve your BBQ Mexican Street Corn immediately with lime wedges on the side for an added burst of citrusy freshness.
