  • 2-3 ears of Corn (If using canned corn i recommend 1 can)
  • 8 ounces of cream cheese
  • 4 ounces of pepper jack cheese (Whole Block)
  • 1 cup of sour cream
  • ½ cup of Mayonnaise
  • 1 1/2 tablespoons of minced garlic (optional)
  • 1 cup of chopped cilantro
  • Cajun Seasoning
  • Tajin Seasoning or Chili powder
  • 1/2 cup of crumbled Queso Fresco
  • Juice from 1 lime
  • Lime Zest
  • Tortilla chips

Cooking Process

To begin, char your corn on all sides to impart a delicious smoky flavor, then set it aside to cool

Charred Corn

Next, prepare a large oven-safe pan or catering tin for the ultimate cheesy corn dip. Start by layering cream cheese in the middle, followed by pepper jack cheese, queso fresco cheese, lime zest, lime juice and mayo. Add minced garlic for an extra burst of flavor, then season everything generously with cajun seasoning.

Once your ingredients are layered, slice the charred corn off the cob and scatter it over the cheese mixture. This adds a delightful sweetness and texture to the dip.

Elote Corn Dip

Preheat your smoker to 250-275 degrees Fahrenheit and carefully place the pan inside. Let it smoke for 30 minutes, allowing the flavors to meld together beautifully.

After the initial smoking, thoroughly mix all the ingredients together to ensure even distribution of flavors.

Smoke for 2 hours mixing every 30 minutes

Once done, remove the pan from the smoker and add chopped fresh cilantro then mix together

Garnish

Then sprinkle Tajin seasoning for a burst of citrusy heat.

Additional Time: 15 minutes
Total Time: 1 hour 25 minutes

Ingredients

Instructions

  • Char your corn on all sides then set aside so it can cool down  
  • Get a large oven safe pan or catering tin 
  • Place your cream cheese down in the middle 
  • Add your pepper jack cheese
  • Add your cream cheese and mayo 
  • Add your minced garlic & cilantro 
  • Season your ingredients with your cajun seasoning 
  • Slice your corn off the cob and add on top of all the cheese 
  • Place on your smoker at 300-350 degrees 
  • Let it smoke for 30 minutes then mix together thoroughly 
  • Add your cotija cheese & lime juice 
  • Smoke for another 30 minutes 
  • After 30 minutes mix again and remove from smoker 
  • Top it off with some more cilantro and Tajin Seasoning 
  • Dip & Enjoy!
