Instructions for Pork Belly
First, trim any excess fat and silver skin off your pork belly. This will ensure even cooking and a better texture.
Next, season the pork belly on all sides with salt, pepper, and garlic seasoning. This step is crucial for flavor enhancement.
Set your smoker to a temperature of 250-275 degrees Fahrenheit. A consistent temperature is key to achieving that perfect smokiness.
Place the seasoned pork belly on your smoker. Let it cook for about 3-4 hours, or until the internal temperature reaches 190-195 degrees Fahrenheit.
During the smoking process, spritz the pork belly every 30 minutes. Additionally, flip it halfway through the cooking time. This helps keep the meat moist and evenly cooked.
Once the pork belly reaches the target internal temperature, remove it from the smoker. Allow it to rest for 25-30 minutes. Resting helps the juices redistribute, making the meat more tender.
After resting, slice the pork belly into strips. These will be the star of your sandwich.
Assemble your Sandwich
Spread mayonnaise on one slice of sourdough bread.
Lay down lettuce and tomato on the mayo-covered slice.
Add the pork belly strips on top of the vegetables.
Place Colby Jack cheese over the pork belly and melt it.
Close your sandwich with another slice of sourdough bread. Slice it in half for easier handling.
Plate up your sandwich and enjoy the delicious combination of flavors and textures.
By following these steps, you’ll have a delectable smoked pork belly sandwich that’s sure to impress.
