Kettle Chip Instructions

Prepare Potato Slices: Start by slicing your potatoes thinly using a mandoline slicer for uniformity.

Soak in Ice Water: Transfer the potato slices into a large bowl filled with ice water to enhance crispiness.

Chill for Optimal Texture: Allow the slices to chill in the ice water bath for 15-20 minutes to achieve the perfect texture.

Drain Excess Water: Once chilled, drain all the water from the bowl to prevent excess moisture.

Dry on Towel: Lay out the potato slices on a dry towel, facilitating the removal of any remaining moisture. Let them dry for 10-15 minutes.

Preheat Cooking Oil: Meanwhile, preheat cooking oil in a deep fryer or pot to 325 degrees Fahrenheit for frying.

Fry Until Golden Brown: Carefully fry the potato slices in batches for 5-7 minutes or until they reach a delightful golden brown hue.

Season and Toss: Transfer the fried chips to a mixing bowl and generously season them with SPG seasoning, ensuring even distribution.

Mix Thoroughly and Set Aside: Gently mix all the chips until they are evenly coated with seasoning, then set them aside for serving.

Steak Instructions

Season: Season your steaks on both sides with a salt, pepper & garlic seasoning

Grill Steaks to Perfection: Begin by grilling your steaks on both sides until they achieve a perfect sear.

Check Internal Temperature: Once the steaks reach an internal temperature of 130-131°F, it’s time to remove them from the grill.

Allow Resting Time: Let the steaks rest for 15-20 minutes, allowing the juices to redistribute for maximum flavor and tenderness.

Prepare Salad Components: While the steaks are resting, take this time to assemble your salad with fresh ingredients.

Create Queso Sauce: In a small pot over medium-low heat, combine queso cheese, crema, and garlic butter. Stir continuously until all ingredients are fully incorporated and the sauce is smooth.

Drizzle Over Chips: Once the queso sauce is warm and well-mixed, drizzle it generously over the prepared chips, adding a delightful cheesy flavor.

Garnish and Serve: Complete the dish by garnishing the queso-covered chips with chopped chives for a pop of freshness and color.

Slice Steaks and Enjoy: Finally, slice up your rested steaks and savor the delicious combination of flavors and textures.
