- Salt, to taste

Season your ribs generously on both sides with your favorite BBQ seasoning to infuse them with flavor.
Preheat your smoker to 225 degrees Fahrenheit(107°C) for optimal cooking.
Place your seasoned ribs in the smoker and let them cook for 2-3 hours, allowing the smoky flavor to permeate the meat.

Spritz your ribs with apple juice every 30 minutes till you achieve the color you are looking for.

Wrapping The Ribs
After 2-3 hours, it’s time to add some richness. Place a few pads of butter on a large sheet of aluminum foil.
Next, place the ribs meat side down on top of the butter. Wrap them up tightly with the aluminum foil to seal in the flavors.

Place the wrapped ribs back on your smoker, maintaining a temperature of 250 degrees Fahrenheit(121°C). Let them smoke for another hour.

Ingredients
- 2 Racks of St Louis or Baby Back Ribs
- BBQ Seasoning
- Buffalo Sauce
- Ranch or Bleu Cheese Dressing

Instructions
- Remove the membrane off the back of the ribs
- If you can't get all the membrane just score what you missed with a sharp knife
- Season ribs on both sides with BBQ seasoning (Binder is optional but if i used one i would have used yellow mustard)
- Let the ribs sit seasoned for 10-15 minutes
- Set your smoker to 250 degrees
- Place your ribs in your smoker on indirect heat
- Make sure your sprints your ribs every 30-40 minutes with apple juice
- Let those cook till you reach an internal temp of 165-170 degrees
- Lay down some aluminum foil with 5- 6 pads of butter
- PLace ribs meat side down on top of the butter pads
- Wrap up your ribs pretty tightly and thrown back on your smoker meat side down
- Bump up your temp to 275-300 degrees for 1 hour
- Drain all the butter out of the foil and flip the ribs over so the bone side is faced down
- Let those cook uncovered for about 30-40 minutes till your ribs reach an internal temp of 200 degrees
- Remove the ribs from the smoker and let them rest for 15 minutes before slicing
- Slice them down the bone and lay on a plate
- Sauce them with buffalo sauce
- Drizzle some bleu cheese over the buffalo sauce (You can use ranch as well)
- Garnish with chopped chives
- Serve up and enjoy!
Notes
- You can use mustard as a binder
- You can use a cajun seasoning to up the heat level!
